Bacalhau à Gomes de Sá

Bacalhau à Gomes de Sá is a traditional Portuguese dish, originally from Porto. Its creation is attributed to José Gomes de Sá, a 19th century cod merchant. The story goes that, as a tribute to his mother, he decided to create a dish that combined the flavours of cod, potatoes, onions and olives.

The recipe quickly became popular, becoming an icon of Portuguese gastronomy. The preparation involves shredding boiled cod and mixing it with potatoes and onions, all baked with a touch of olive oil and decorated with olives and hard-boiled eggs.

Today, Bacalhau à Gomes de Sá is enjoyed both in Portugal and in Portuguese communities around the world, symbolising the country's rich culinary tradition.

Ingredients:

  • 400 g shredded cod
  • 600 g potatoes
  • 2 large onions
  • 2 cloves of garlic
  • 100 ml olive oil
  • 2 hard-boiled eggs
  • Black olives (to taste)
  • Chopped parsley (for garnish)
  • Salt and pepper (to taste)

Optional

  • Milk (for cooking the cod)
  • Pimenta-do-reino
